Solyanka is a spicy and sour soup typical of Eastern European and East German cuisine. Solyanka combines shchi (cabbage, sour cream) and rassolnik (meat broth with pickled cucumbers and pickle brine); using vinegar instead of pickle brine is considered "bad cooking." The liquid and solid components of the soup are prepared separately and combined only a few minutes before serving.
