Khinkali is a traditional Georgian dish consisting of large, thin dough balls filled with a succulent filling of minced meat (beef, lamb, or a mixture of both) with herbs, onions, and spices, and a fragrant broth inside. They are hand-formed, boiled, and eaten by holding the "tail" and drinking the broth before eating the rest—this differs from the Dagestani "khinkali," which are pieces of boiled dough filled with meat.
